We are so excited to announce that BBQ Master Jeremy James will be joining us tomorrow night (Friday June 16th) in the garden at Homespun for a very special barbecue from 6-9pm. Chef Ty Beaty has prepared some delicious side dishes too, and we of course have all the wine and beer pairings to go with Jeremy's signature Cornish Hens and Pork Baby-Back Ribs. It promises to be an amazing night for the folks who make it out.
For those of us at Homespun who have had the pleasure to interact and begin to get to know Jeremy, he is the type of person who puts you immediately at ease. His charm is so natural, so quietly magnetic. Having worked in the medical profession, having served people in that way, Jeremy recently made a choice to take care of people in a new way, by cooking food for them and nourishing their bodies and spirits. Friends and family have told him for years now that he should take his love of food to the people, and after the loss of his father, and the stress of working at the hospital over the last few years, Jeremy decided to take the risk and finally make that dream a reality.
Jeremy's BBQ is straight up delicious. Like put your fork down, bite your knuckle and take a moment for yourself, delicious. It is that good.
I sat down with him this week to talk about his style and influences.
Jeremy likes to say he cooks his barbecue from the outside in, the skin is the star, focusing on the texture and the crispness, achieved through a 24 hour slow brine where the meat submerged with onions, garlic, rosemary, thyme and other aromatics. The next part of the process, Jeremy does a dry-rub where he really expresses the flavors of Antigua. Here we find lots of fresh bright lemon with thyme, rosemary and sorrel. The flavor is profound. You remember it, you want more, you tell a friend.
Jeremy feels like he learned his love of food from his grandmother in Antigua, where she worked over a wood fire, preparing food for all the locals in their family's grocery store. It's just sort of always been there for him, says Jeremy, that natural way of taking care of people. He says he feels there is a greater exchange that can happen over food, not just an exchange of capital-- some money for some food-- but an exchange of ideas, of understanding, of caring and kindness.
And music, don't even get me started here, turns out Jeremy was a professional musician, touring with the likes of Atlantic Star and Bobby Brown as a guitarist, as well as having secured his own major label deal at one point with Capital Records. His singing voice is effortlessly soulful, bounding with joy.
We might try to coax him to perform tomorrow if I can get it together to bring an old tube amp and a Fender Stratocaster down to Homespun tomorrow night. You'll have to show up to find out.
